Here is a favorite of mine made by Lisa Yates.
Zucchini Cake
1/2 cup margarine, softened
1/2 cup oil
1 3/4 cups sugar
2 eggs
1 tsp. vanilla
2 1/2 cups flour
1/4 cup cocoa
1 tsp. baking soda
1 tsp. salt
1/2 cup buttermilk
2 cups grated unpeeled zucchini
Topping
6 oz. miniature chocolate chips
1/2 cup brown sugar
Pecans (optional)
Cream margarine, oil, and sugar until light and fluffy. Beat in eggs one at a time. Add dry ingredients alternately with buttermilk. Stir in zucchini and vanilla.
Pour into a greased 9 x 13 pan. Sprinkle on the topping. Bake at 325 for 55 minutes.
